To maintain the highest standards of hygiene andefficient work practices in all areas.Responsible to : Head Chef, Sous Chef, Junior Sous ChefMain Duties :• To ensure all mis-en-place is completed on time for service and to the higheststandards.• To ensure correct portion control as per specifications.• To ensure that each member of your team is fully aware of theirresponsibilities and comply with health, hygiene and safety regulations.• To help prepare all orders for the fresh and dry store items required on a dailybasis.• To report any hazardous or faulty equipment immediately.• To communicate closely with your team and all food and beverage andpersonnel.• To ensure proper rotation of stock in all refrigeration.• To Deputise in the absence of the Junior Sous chef.• To consistently produce quality food befitting a five star rating.• To use professional work methods at all times.• To carry-out sufficient mis-en-place allowing for 4 star standards to bemaintained.• To ensure your section is run is an organised and hygienic fashion, complyingwith cleaning schedules and EHO requirements.• To practice portion control and stock rotation as per training.• To receive deliveries and return unsatisfactory produce as per training.• To demonstrate an approachable manner and operate as a team member.To display a professional, caring and anticipative attitude and approach to yourwork and colleagues at all times.Focus Areas:Professional client image• Personal appearance• Hotel &amp; departmental standards• Example setting• Results orientated• Confidence &amp; enthusiasmAnticipative service• Finger on the pulse• Client comments• Service orientation• SpontaneityTeamwork• Flexibility• Empathetic• Multi-skilling• Co-operation in the department• Inter-departmental co-operation• Personal team work orientation• Example settingCommunications• Daily briefings• Attending hotel meetings• Departmental noticeboardsdepartmental meetings
